  2. may be this a recipei from other african country but indeedly not sudan , we use dried okra powder named WAIKA just like that used in your recp first step is the same but we add tomato sause sometimes to thicken it no green stuff garlic is added directly into it , its served with KISRA local bread made from DURAHA or sorguhm not with rice, thanx for your presentation , and sorry for my poor english it is not my first lang

  3. some people serve it with ASSIDA which is thick porridge made from fremnted DURRAH or sorguhm flour mixed with water cooked for mins , pour in deep plate then left for while too cool

  5. Thank you for your comment. and don’t worry, your English is perfectly clear. I learned this recipe from my mother in law. She called it moulah waika and served it with kisra. but now we serve it with rice. I think dry okra is the thickening agent in the okra soup. But i will try with tomato next time.   6. I wish I could help you. I dry my own at home. I don’t know if it is sold on the market. Try Indian or Sudanese (or other African countries) you might find it there. Good luck! if you don’t find the powdered Okra use fresh okra and whisk it with a machine after it is cooked. cook the same way. It will not taste the same, but it will be near. The soup with the fresh okra is called Moulah Bamia in Sudan. Enjoy! 🙂

  7. I have heard about Assida but I have never tasted it. I always thought it was some kind of flour mixed with water and cooked but you mentioned in your comment that the mixture is fermented.
