Jamie makes this beautiful beef stew using oxtail for an amazing on-the-bone flavour. Then he takes it three different ways – with pasta, on Mash and as a soup. Amazingly versatile and incredibly tasty. You can make it on the hob or in a slow cooker too.

    1. +The Joker His name is Gennaro Contaldo. The chubbier guy has pretty much the same carbonara recipe though. Both good.

    2. If you actually watched a Gordan Ramsay cooking video, you’d know that he doesn’t shout or curse at all (he might curse a little, but I haven’t noticed). Also, Ramsay is a chef whereas Jamie is a cook who focuses more on health than flavour. They’re both fine, but with a lot of Jamie Oliver’s recipes you need to pretty much make up your own portions and seasonings for it, otherwise it tastes bland.

    1. @epicmonkeydrunk Yes. You can use wine, it’s probably the healthiest alternative since there is virtually no carbohydrates in there. If you wanna stay away from alcohol completely you can use a beef or vegetable stock; in other words, just leave the alcohol out completely. Hope this helps!

    2. Christijan mArv beef stock could work. you could also try a reduction of lager with low sodium soy sauce. part of the point of the porter is to add sweetness, maybe a tiny pinch of sugar. and he uses Wooster, that’s essential.

    4. I wouldn’t even say it has to be something you’d like drinking, the dark beer gives it a richer flavour, but the final product doesn’t have a beery taste.

    5. I was back in a day in Sicilia it was pretty bad first time I saw anything like in movies .. don’t know though how is it now there.. but Italy is not bout Mafia…

  1. For my stews I use the slow cooker. I was impressed Jamie didn’t feel the need to add beef stock.

  2. That amount of oxtail in my country if fresh would cost abt $100. 4 pieces can cost from $10-$18. When I can afford I buy.
