Kushary is very famous meal in Egypt. It considers the national recipe of the country. It is a vegetarian recipe. It is very satisfying meal and very delicious. I believe everyone has most of the ingredients available in the home. It needs a few steps and some time. It is very easy to prepare and everyone can do it. It is a no fail recipe and the result is amazing. So give it a try and you will love it:).

These ingredients will serve 2-3 people

1-Cooking White Rice and Vermicelli

1 cup rice soaked for 15 minutes and drained
1/4 cup vermicelli
1 tsp salt or to taste
3-4 Tbsp oil
1 1/2 cup boiling water

In small pot heat oil on medium heat then add vermicelli and mix continuously until it turns brown then add rice and mix well then add salt and water. Let the rice boil until almost all the water disappear then lower the heat and cook for about 20 minutes.

2-Cooking The Pasta

1 cup elbow or any small pasta

Cook past as usual and as the direction written on the pasta box and set aside.

3-how to Cook Green Lentils

1/2 cup lentils washed and drained
1 1/2 cup water

In a small pot and over high heat add lentils and water. Lower the heat and cook until the lentils are tender but not mushy. Drain if there is any water left and set aside.

4-Frying the Onion

1 medium onion cut lengthwise
About 1 cup oil to fry

Sprinkle salt on the chopped onion and a set aside for about 30 minutes then pat dry with towel paper then fry in a plenty and hot oil. Keep staring until onion turn brown and crispy. Keep aside on a towel paper.

5-How to Make Tomato Sauce (Red Sauce )

2 cloves of garlic minced
1 medium tomato chopped very small
2 Tbsp tomato paste
1/4 tsp cumin powder
1/4 tsp coriander powder
1/4 tsp salt
1/4 tsp white pepper
1 bay leave
1/8 tsp grated fresh nutmeg
1/4 tsp hot sauce or crushed red pepper seeds to taste
2 Tbsp oil
1 1/2 cup boiling water

In a small pot, heat oil over medium heat then add garlic and cook for 1 minutes. Don’t brown. Then add tomato, tomato paste, spices and salt and cook for 1 minute then add water and hot sauce and cook over low heat for about 30 minutes or until the sauce is thickened. Adjust the spices, salt and hot pepper to your taste.

6-How to Make White Sauce (Daah)

2 Tbsp lemon juice
2 Tbsp white vinegar
1/4 cumin powder
1/4 coriander powder
1 -2 garlic cloves minced
1/8 tsp salt or to taste
1/2-3/4 cup water

Mix all the ingredients well and set aside. Mix again at the time of serving.

7- 1 can of chickpeas or garbanzo beans

8-How to prepare the Dish

In wide plate put some rice and vermicelli as the first layer then add green lentils then pasta then chickpeas then fried onion then tomato sauce then finally white sauce. The amount of sauces are depend on the person preference. Serve with simple salad.
