Ugali is made of maize meal and water. I used Polenta.
1 liter water
Polenta (Maize/Corm Meal)
2-3 Large Tomatoes
2 Kale Large Leaves
2 Large Spinach Leaves
Boil Water in Pot
Add 2 table spoons of maize
Stir until porridge consistency
While Stirring, add more maize until it eventually becomes dough.
Remove from heat, it is ready.
Braise onion in water until tender.
Add Chopped Tomato and stir occasionally until soft.
Add Finely Chopped Kale & Spinach and cover with a lid for 3 minutes.
For traditional experience, eat the Ugali with your hands, breaking off bite-size pieces of Ugali and dipping it into the sauce.
